Abstract
In recent years, consumption of fruit-based smoothies has increased. Fruit-/vegetable-based smoothies generally contain high levels of nutrients such as antioxidants, fibers, and vitamins. Smoothies are a blended form of beverage which are a typical semiliquid, smooth consistency, containing fruit(s)/vegetable(s), concentrated juice, and other complements such as yogurt, milk, or honey, and are prepared with different combinations of fruit and vegetables. The objective of this chapter is to highlight the relevance and production of fruit-/vegetable-based smoothies. Various technologies employed for improving microbial safety, nutritional and organoleptic attributes are also discussed.
