MODELLING OF COLD PLASMA REACTIVE SPECIES IN A MODEL FRUIT JUICE AND PREDICTION OF KINETICS DURING SHELF LIFE

Abstract

Cold plasma (CP) is a novel non-thermal technology with promising food safety and preservation applications, food processing, and agricultural applications. In this study, a sequence of model apple juice matrix of increasing complexity was developed to understand the interactions between spark plasma and apple juice solution. These were investigated as a function of treatment time (1-5 min), and further, the effect of the individual matrix compound on the plasma reactive species chemistry mediated in the liquid model was explored. The storage study at 4±1°C for 28 days was conducted to understand the behaviour of the plasma reactive species in the liquid model over shelf life. The results showed the generation of hydrogen peroxide (H2O2), nitrates (NO3-) and nitrites (NO2-) species with spark plasma. Nitrite species were short-lived and were not detected after Day 1. Nitrates and peroxides were detected over the storage time of 28 days; H2O2declined in the matrix with juice sugars, while water and buffer generated more NO3-during storage. A model for nitrates and hydrogen peroxide kinetics was fit through non-linear regression to assess the effect of influencing variables during the storage of apple juice. The present models will help predict the behaviour of key reactive species generated by the CP in the model system.
