Abstract

Hyperspectral imaging (HSI) is an emerging technology that integrates conventional imaging and spectroscopy to attain both spatial and spectral information from an object. This article provides an introduction to HSI: HSI equipment, and image acquisition and processing are described. Recent applications of HSI in the assessment of dairy foods are presented and potential future applications are discussed.
