Shiv Shankar, PhD, is an Assistant Lecturer in Food Engineering at the School of Food Science and Environmental Health, Technological University Dublin, City Campus, Dublin, Ireland. Dr. Shankar completed his Bachelor's degree in Agriculture from Banaras Hindu University, India and Master’s degree in Molecular Biology and Biotechnology from Indian Agricultural Research Institute, India. He was awarded a PhD in Biotechnology from National Chemical Laboratory, University of Pune, India. After that, he worked as a postdoctoral fellow at RMIT University, Australia, Prince of Songkla University, Thailand and as a Research Professor at Mokpo National University, South Korea, and Kyung Hee University, South Korea. Before joining TU Dublin-City Campus, Dr. Shankar worked for five years as a Research Associate at INRS-Armand Frappier Health and Biotechnology Centre, Canada, and the University of Guelph, Canada. Dr. Shankar's current research aims to develop an antimicrobial formulation of natural extracts and antimicrobial nanoparticles for food preservation, food packaging, and biomedical applications. He also works in waste valorization, engineering biodegradable and compostable flexible and rigid materials for sustainable packaging and irradiation systems for food preservation.
